Sausage Stuffed Peppers

Appetizer.

Ingredients

  • 4 pcs. green, yellow or red bell peppers
  • 2 cups cooked white rice
  • 1 cup corn kernels, frozen or canned
  • 1/4 cup shredded carrots
  • 1 cup cooked chicken or pork sausage, chopped
  • 2 tbsps. green onion, diced
  • 1/2 cup grated Monterey Jack or Pepper Jack cheese, divided
  • 1/2 cup barbecue sauce
